Food” vs. “processed food”
Generally speaking, the “food” we eat is composed of organic materials, such as carbohydrates, fat, protein, water, and more. The food produced with the implantation of genes is called “genetically modified food.” Cooked food is called a “dish.” Food produced with additives is called “processed food.”
Most processed food is sold with inner and outer packages. Yet, we may find it difficult to distinguish many processed foods from natural varieties, for example, crab meat and processed crab meat, chicken and artificial vegetarian chicken, natural agar jelly and artificial jelly, and more.
The functions of food additives: extending the preservation period, controlling food color, taste, texture, and nutrition values, and ease of preparation.
The most frequently seen food additives are: preservatives, bactericides, antioxidants, bleach, color fixatives, leavening agents, nutritious additives, colorant, spices, flavoring agents, pasting agents, coagulating agents, food chemicals, solvents, emulsifiers, chemical starch, acidity adjustment agents, moisture control agents, and more. With the creation of the “Act Governing Food Sanitation,” measures are being applied to food processing. By standardizing and quantifying food processing additives, it aims to control sanitation in the production of food and drink.
